We don’t consider cooking to be an exact science, so you may occasionally find our cooking times or quantities a little approximate, but it’s all a matter of personal feel and intuition. If you like garlic (like we do), use a lot. If there’s an ingredient you don’t want, take it out, or replace it (although this is unfortunately not as true for pastry). These things also depend on the kind of equipment you have at home (pans, oven, forms, casserole, mixer, etc.)… Lastly, if you have specific questions on a particular recipe or process, we’re happy to help!
